  1. The flavor of brown butter enhances plain butter cakes and spice cakes. The icing has little golden brown flecks in it. Make just before using.
  2. Melt in a medium skillet over medium heat:
  3.       6 tablespoons unsalted butter
  4. Heat, stirring constantly, until deep golden. Gradually whisk in:
  5.       1 1/4 cups powdered sugar
  6.       1 teaspoon vanilla
  7. Scrape into a bowl and beat until smooth and spreadable; do not attempt to thin with liquid. Use immediately.
